We’re not done using our grill! School may now be in session and it’s getting darker earlier in the evening, but I’m planning to grill far into the fall. That being said, I was getting bored with the same ol’ recipes on the grill. I love a good hamburger like the next girl, but sometimes I want to make something a little different for dinner. This past Monday night was no exception.
I had our family over to watch the Buckeyes play against Virginia Tech. I decided to grill up something unique for dinner and decided on cornish hens. I’ll be honest, I’ve never made a cornish hen in my entire life. But they seem so cute and small, I thought – how hard could it be? (And since it was family that was coming over, I knew if I failed big time – they would still love me. Am I right?)
I grabbed some Tyson® Cornish Hens from Walmart along with some Kikkoman® Sauce to make a marinade. Tyson Cornish Hens are All Natural. They have no artificial ingredients, preservatives, hormones or steroids. That’s a winner in my book. They do however, like to hide. I looked everywhere for the cornish hens thinking they would be next to the chicken. Instead, I finally found them near the seafood in the freezer cases.
*Make sure if you purchase your cornish hens and they’re frozen that you give them a few days to thaw in the refrigerator.
The sauce I made was SO easy. I combined the ingredients below in a bowl and whisked away. I decided to make this marinade from Kikkoman soy sauce because I knew that it makes a great brine to ensure a “juicy bird”. Grilling can dry out meat, and so a marinade is a must. I think sometimes people only think of soy sauce for Asian dishes but it really can be used for lots of great recipes.
Here’s the ingredients I used:
3 TB Kikkoman Soy Sauce
3 TB water
1 Cup sugar
1/2 Cup white vinegar
1/2 tsp garlic powder
1 tsp salt
Alright, so here’s where my bravery came in with this new recipe. In thinking about grilling cornish hens, I had to take into consideration that you have to cut out their back bone area to lay them flat. And by bravery, I mean I talked my husband through it. 🙂 “We” found it was easiest to cut out the back bone area using a pair of kitchen shears. For anyone who likes technical terms, this entire process is called spatchcocking.
While they were grilling I had tossed some little potatoes with olive oil and salt and roasted them at 425 degrees Fahrenheit for about 40 minutes. I had originally planned to grill them, but there was simply no room on the grill!
It took about 45 minutes to completely cook the cornish hens through. I used a thermometer to make sure the temperature reached 180 before removing them from the grill. I’m so glad I took the risk to try something new. The cornish hens felt all fancy. If that is even possible using the grill during a football game. 🙂 They were a big hit along with the rest of dinner – and I will definitely be making the marinade again, as well.

- 3 TB Kikkoman Soy Sauce
- 3 TB water
- 1 Cup sugar
- ½ Cup white vinegar
- ½ tsp garlic powder
- 1 tsp salt
- Combine all ingredients and whisk until the sugar is dissolved. Set aside.
- Spatchcock the cornish hens so that they will lie flat on the grill. Marinate in the sauce.
- Preheat your grill to low.
- Grill the cornish hens on low for 20 minutes. Flip grill another 25 minutes.
- Let cool for 10 minutes after fully cooked.
- ** Use a brick covered in foil to keep the cornish hens flat during the cooking process.
