Eggs, eggs, eggs! Leftover meat with potatoes to make hash, topped with an egg or egg burritos with cheese and veggies or scrambles and some toast!

Omelets are super fast to make and the filling can be almost anything.
Leftover chopped-up meat of any kind, veggies, a bit of cheese or some dip. It doesn’t take much to make a nice hot supper in 10 – 15 minutes. Make some toast
and dinner is done! Don’t be intimidated about making an omelet. You’ll be surprised at how easily it’s done!

I love to make quesadillas. It is a great way to use up those leftovers lingering in the fridge. They don’t have to be “mexican” flavored either. Shredded mozzarella cheese, sliced chicken, and a dash of Italian seasoning are yummy dipped in jarred spaghetti sauce. Quick and easy snack or meal.
