Who serves peanut butter and jelly sandwiches at some point every single week to their kids? This girl does! And while it’s pretty easy to slap some peanut butter and jelly on a few slices of bread, it’s lazier easier to make them ahead of time to freeze. Why? Because it’s perfect for lunches for school! It’s also perfect for lunches at the zoo or the park. How do I know this? Because in the time it takes you to make one sandwich you can make two. The most time is spent getting the peanut butter and jelly out. And let’s talk about the fact that every single sandwich can be made with one knife for jelly and one knife for peanut butter. Less dishes.
(Actually, I use the same knife for peanut butter and for jelly. I get peanut butter in my jelly and jelly in my peanut butter. It happens.)
So in order to help simplify the process when I’m packing for my two boys for a day outing, I made these uncrustables. They’re soooo easy to make and for some reason my kids go crazy for them. It might be the fact that they don’t like crust and I refuse to cut the crust off so they have to suffer and eat around it.
Here’s what you need to make the uncrustables.

I feel like my peanut butter needs it’s own picture. I just LOVE the Ashery bulk food store in Northeast Ohio. If you’ve never been, go! It is bulk food heaven. I really wish I lived closer.
Make your peanut butter and jelly sandwiches. You could also do Peanut Butter and honey. Live a little. 🙂
Now, there are fancy uncrustable sandwich makers like this one. However, I found it was easier to just spend $2 on this cookie cutter. The comfort grip (the blue part) is what will seal the sandwich. Now, because the metal is facing up you’ll want something to protect your hands as you press down. I used an oven mitt. Give it a little twist (if it’s a circle like this one) and turn it over to gently peal away the crust.
What you have now is an uncrustable and crust. You can place the uncrustables in the freezer for 12 hours on a cookie sheet. Then bag them individually. It’s the simple things that make packing lunch more fun!

Homemade Uncrustables (Freezer Ready!)
Ingredients
- 2 Tablespoons peanut butter
- 1 Tablespoons jelly
- 2 slices bread
Instructions
- Make a peanut butter and jelly sandwich.
- Using a cookie cutter with a soft edge, press into the sandwich to make a seal.
- Place in a plastic bag and freeze.

Have you tried taking all of that unused crust and making a bread pudding out of it? In my house, I have a Ziploc bag that lives in the door of my freezer, it’s where I toss all my bread heels, slightly stale pieces of leftover French bread and the like. Once I’ve collected a fair amount I pull the bag out of the freezer and make a bread pudding or a batch of homemade croutons with it.

Hi Shane, I would use them within 3 months. To be honest, they are used much faster in our house so we never get to that point. 🙂

Keep an eye out at your dollar store. I got the sandwich sealer like that at Dollar Tree for $1!!! I love it, but that is A great idea with the cookie cutter, mine love different shapes.
