Description

Easy apple coffee cake recipe combining tart apples and a sweet crumble topping.  This breakfast recipe pairs perfectly with a hot cup of coffee!


Ingredients

  • 1/2 Cup shortening
  • 1 Cup sugar
  • 2 large eggs, well beaten
  • 1 teaspoon vanilla
  • 2 Cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 Cup sour cream
  • 2 Cups apples, finely chopped
  • 1/2 Cup walnuts, chopped
  • 1/2 Cup brown sugar
  • 1 teaspoon cinnamon
  • 2 Tablespoons butter, cold

Instructions

  1. Preheat oven to 350˚ F and butter a 9×13 inch pan.
  2. In a mixing bowl, cream together shortening and sugar.  Add 2 well beaten eggs and vanilla.
  3. In a seaparate bowl, mix together flour, baking powder and salt.  Add to the creamed mixture along with the sour cream.
  4. Fold in the chopped apples and walnuts.  Spread in a greased 9×13 pan.
  5. In a small bowl, cut in butter to the cinnamon and brown sugar.  Sprinkle over the batter in the 9×13 inch pan.  Bake at 350˚F for 35-40 or until a toothpick inserted in the middle comes out clean.
