Barbecue Beef Cups

I was looking for some easy recipes with ground beef and came up with this winner!  I made barbecue beef cups and not only are they ones of those easy recipes with ground beef but they were a huge hit with the family!  This again, is one of the recipes I received in my little book of recipes from our wedding.  Have I mentioned that I’m having so much fun going through them?  I just know each one was hand selected for us and I’m sad it took me 7 years to start to enjoy them!

This is a really simple recipe.  Typically you can find the biscuits on sale.  And since we usually stockpile the cheese and have a cow in our freezer, it’s a great meal to have on hand to whip up!

Here’s what you’ll need to make these barbecue beef cups:

1 lb ground beef, browned and drained
½ Cup barbecue sauce (I prefer: Sweet Baby Ray’s)
1 egg, beaten
1 Cup cheddar cheese
2 (10 oz tubes) buttermilk biscuits
3 green onions, chopped

Barbecue Beef Cups Press BiscuitThe first step is an easy one that the kids can help you with.  Take each biscuit and flatten it by hand.  Place it into a muffin pan that has been sprayed with cooking spray.  Push it against the edges to form a mini-bowl.

*If you’re like me and accidentally buy the mini biscuits, you can easily take two biscuits and press them together to form a larger circle of dough to put into the muffin pan.

Mix Ingredients Barbecue Beef Cups

Cook and brown the ground beef in a skillet over your stove.  When it’s completely cooked be sure to drain it.  (I also add a little water and drain it a second time for good measure.)  Remove the ground beef from the stove and mix in the beaten egg. Add the barbecue sauce as well.  Mix well.

I really thought that the egg would scramble but it didn’t.  I added it to the ground beef and started to stir and it was completely fine.  You could probably leave the egg out if you wanted to.  It’s simply there to help hold the ground beef mixture in place as you eat these scrumptious beef cups.

Fill Barbecue Beef Cups Easy Recipe

Add the beef mixture to each biscuit bowl.  I used my cookie scoop.  Perfection.

Cheese Topping Easy Recipes with Ground Beef

Top it with cheese and bake for 8 – 12 minutes in a pre-heated 350 degree fahrenheit oven.

Barbecue Beef CupsTop them with chopped green onions and enjoy!  These are so easy and so fun for dinner.  I left out the onion for my younger boys, but they devoured them.  This is a really inexpensive meal as well since the cheese and biscuits can routinely be found on sale.

Ingredients

Scale
  • 1 lb ground beef, browned and drained

Instructions

  1. Preheat oven to 350 degrees fahrenheit.
  2. Press biscuits into the bottom and sides of a muffin pan that has been sprayed with cooking spray.
  3. Cook and drain your ground beef. Remove from the stove.
  4. Add barbecue sauce and the beaten egg to the ground beef.
  5. Spoon the beef mixture into each biscuit bowl.
  6. Top with shredded cheese.
  7. Bake for 8 – 12 minutes until golden brown.
  8. Top with chopped green onions.

    May I ask for a substitute for buttermilk biscuits? We don’t get them here, I presume pastry may work but would like a more doughy texture. Thanks!

    When you say 1/2 BBQ sauce, is that 1/2 a cup or 1/2 the bottle? If it’s half the bottle, what size bottle?
