Oh, man you know I love a good soft cookie and these chocolate chocolate chip cookies do not disappoint. I wanted to try this recipe I found because my son LOVES chocolate. That might be an understatement. But more importantly, I wanted to create super soft and delicious cookies that weren’t overwhelmed by the chocolate – if you know what I mean.

Making Chocolate Cookies

This recipe walks closely to every single good cookie you’ve ever made. Follow these directions closely and you’ll have fabulous results.

Prep: Preheat the oven to 375˚ F. Line a baking sheet with parchment paper or baking mat.

Cream the butter and sugar: In a mixing bowl, beat together the softened butter and sugars on medium speed for approximately 2 minutes. You want them to be light and fluffy.

Add: Combine the egg and vanilla with the creamed butter and sugar.

Mix in: Mix in the cocoa, flour, baking soda, and salt. Mix on low speed until all the dry ingredients are well incorporated. Add the semi-sweet chocolate chips and mix until evenly distributed.

Bake: Drop by a 2 tablespoons cookie scoop onto the prepared baking sheet. Bake in a preheated 375˚ F oven for 8-10 minutes, or until the cookies are set. Cool for 2 minutes and then transfer to a cooling rack.

Tips and Tricks

Do not over bake! Over baking cookies is the one great sin that so many seem to commit. It’s a little hard to tell with these cookies because they are naturally dark in color, but you are looking for just a light golden edge and the middle to be set. To test your baking time, bake just one cookie and let it cool to test.

Watch the oven! Each batch of cookies can be different in time for baking based on where your oven is at in its heating. Many newer ovens today reset their temperatures after the temperature drops 20-30 degrees. That makes a big difference when baking your cookies! Always, set to the lowest time and then check each minute more until done.

Let cool completely before storing. Let the chocolate fully set on the cooling rack before storing.

What is the secret to soft cookies?

There are two components to making these super soft cookies. One, you do not over bake! When in doubt test a cookie. You are looking for a gently set cookie in the center with just a bit of crusty edges. The second component is the right combination of fat and flour which these cookies have. They are not flat – they are the perfect combination of dense and soft.

How To Store Cookies:

Once fully cool you can store these cookies in an airtight container for up to 3 days. Store in the freezer for up to 3 months. These cookies freeze super well! Let thaw at room temperature before enjoying.
