Corn flake Cookies Homemade Recipe

This time of year you’ll find cookies every which way you turn.  But what about unique cookie recipes?  I have to say that I’m a bit the traditionalist when it comes to baking.  If I’m going to spend the time I want to know that results.  And there’s something about certain cookies that fit right into the theme of Christmas time.  However, let’s live a little.  Right?

How about we put some cereal in our cookies?!

Are you game?  I’m sharing with you this awesome corn flake cookie recipe today because I think cookies this this are a conversation piece.  And they taste great too!

To make these cookies you will need:

1 cup Butter, softened slightly
1 ½ cups Sugar
½ cup Brown Sugar
1 Egg
1 tsp Vanilla Extract
1 ½ Cups All Purpose Flour
½ tsp Salt
½ tsp Baking Soda
½ tsp Baking Powder
⅔ Cups Chocolate Chips
3 Cups Corn Flake Cereal
1 Cup Mini Marshmallows

In a large bowl, mix together the butter and sugars. Whip in the egg and vanilla extract. Add in the flour, salt, soda, and powder and mix well until all ingredients are incorporated.  Pretty much at this point it’s a typical cookie recipe.

Here’s where we go CRAZY.  Carefully fold in the chocolate chips, corn flakes, and marshmallows until just combined. Place the dough mixture in the fridge for 30 minutes to an hour before baking.

To bake, pre-heat oven to 350 degrees. Scoop large scoops of cookie batter onto a greased cookie sheet, using a muffin scoop.  I have been using parchment paper thanks to some of you recommending it.  LOVE it.  Just a little warning if you’re new to parchment paper like me, don’t angle the pan too much when you take it out of the oven.  Lesson learned.  Slide!

Bake for about 15 minutes. Cool and enjoy these large, crunchy cookies!

    I left out the marshmallows-too sweet- and added nuts. The first patch slide out totally flat. When making the recipe I thought 1 1/2 cups of flour rather small. I added an additional 1/2 cup flour and that kept them to acceptable thickness. They are very sweet but delicious.

      Glad you enjoyed them! I add a little extra flour sometimes too depending on the humidity.

    What is the purpose of the mini marshmallows? I’m not a fan of them and wondering what might happen to the cookie if baked without them. This sounds like a yummy cookie though.
