This is one quick shredded chicken secret! I love to make freezer meals like the chicken enchilada casserole. But when it comes to getting the chicken shredded, it just feels like one extra step that slows down the process. Not any more! The night before I do any freezer cooking that involves chicken, I use this easy shredded chicken secret. I’m letting you know about it today – I use the crockpot.
Seriously, it could not be more easy. Essentially you put the chicken breasts in the crockpot (I’ve even done it when they’re frozen) and turn it on. I add a little water or chicken broth if I have any. I then let it do it’s thing on high for about 3 hours. However, one time I completely forgot about it and it went for 5 hours. Whoops! What turned out was the easiest shredded chicken ever. It fell apart and was not dry at all.
Once I have the shredded chicken, I put it in a pan like the one pictured above. You can use forks to shred the chicken into bigger pieces like I do. If you want the shredded chicken to be a bit less chunky and more shredded, cook it for a bit longer. I then put it in the refrigerator until the next day. It’s super easy prep work! You can also freeze it for later. Easy, right?! 🙂

I add 4 chicken breast, one onion, 3 carrots peper, then fill the crock with water to the top. Turn on low for 4 hours I take chicken out for shredding then strain the broth for the freezer. What a time saver

I’ve also “shredded” it after cooking it with a hand mixer. It seems a whole lot quicker than a fork.
