Peach Coffee Cake

Ingredients
  • Cake:
  • 2 TB shortening
  • ¼ Cup Sugar
  • 1 egg (beaten)
  • 1⅔ Cup flour
  • ½ tsp salt
  • 2 tsp baking powder
  • ½ Cup milk
  • 1 can peaches
  • Topping:
  • 2 TB flour
  • 1 TB butter
  • ¼ Cup sugar
  • 1 tsp cinnamon
Instructions
  1. Mix flour, salt and baking powder. Set aside.
  2. Cream shortening and sugar.
  3. Add beaten egg. Mix well.
  4. Add dry ingredients alternately with milk. Mix until all ingredients are well blended.
  5. Pour into greased cake pan.
  6. Arrange peaches on top.
  7. Mix flour, sugar and cinnamon together for topping. Cut in the butter. Sprinkle over the top of the peaches.
  8. Bake in preheated oven for 35 minutes at 375 degrees fahrenheit.
