Like my tomato quiche recipe, this recipe is found in an old church cookbook. The church was the one I grew up in and my husband and I were married at.  It was printed in 2006. I enjoyed making this recipe for breakfast and freezing the leftovers for easy breakfast in the future!

How to Make Egg Bake

Preparation

To start, preheat your oven to 350˚ F and grease a 9×13 baking pan. This will make sure that your egg bake doesn’t stick to the pan and cooks evenly.

Step 1 – Cook the Bacon

Next, cook the bacon in a pan until it’s crispy. Once it’s done, drain the excess fat and crumble the bacon. Set it aside for later.

Step 2 – Prepare the Potato Mixture

In the same pan, sauté the onion in butter until it’s soft. Then, in a large bowl, whisk the eggs. Add the cooked potatoes, sautéd onion, and crumbled bacon and the remaining ingredients. Stir everything well to make sure it’s all combined.

Step 3 – Assemble and Bake the Egg Bake

Now, pour your potato and bacon mixture into the greased 9×13 baking pan. Make sure it’s spread out evenly. Then, put the pan in your preheated oven and bake it for 45 minutes. You’ll know it’s done when the top is golden brown and the center is set.

Ingredients
  

  • 4 slices bacon cooked until crispy, crumbled
  • 1 Tablespoon butter or leftover bacon grease
  • ¼ Cup onion finely chopped
  • 10 large eggs slightly beaten
  • 2 Cups frozen Southern-style hash browns or leftover roasted potatoes cubed
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • 16 oz small curd cottage cheese
  • 16 oz shredded cheddar cheese
  • ½ Cup all purpose flour
  • 1 Tablespoons baking powder

Instructions

  • Preheat oven to 350˚ F. Grease a 9×13 baking pan.
  • Cook the bacon until crispy. Drain and crumble. Set aside. Saute the onion in butter (or leftover bacon grease) until soft and translucent. Set aside.
  • In a large bowl, whisk the eggs. Add the potatoes, onion, bacon and the remaining ingredients. Stir well to combine. Pour into the greased 9×13 baking pan.
