Jiffy cornbread mix is NOT gluten free. It has wheat flour added as an ingredient. However, I make my own corn bread from a recipe on the corn meal box using Bob’s 1:1 gluten free flour and use that on top instead of Jiffy mix.

This is a good base recipe! I added a chopped jalapeño, small chopped onion, and a can of bacon pinto beans in with the meat. I also seasoned the meat with salt, pepper, garlic and onion powder, chili powder, and cumin. I used tomato paste already seasoned with basil, garlic, and oregano. It turned out amazing!

So I doubled the receipt and followed step by step but the 8×8 pan was to small so made a mess as I was pouring the cornbread, egg, and milk mixture. I’m hoping it will turn out right.

Hi! If doubling the recipe you’ll want to double the baking pan to fit it. As the cornbread rises it may come out of the pan. I’m sure it will still taste great, but you may want to put a pan below it in the oven so you don’t have a mess to clean up. 🙂

While it’s good as posted here,it’s also great adding chopped gr.onions,extra cheese,tomato chunks,sliced or chopped black olives(to the top AND/OR to the inside) along with chili,onion,garlic,cumin powders…pretty much anything that’s good on/in Mexican foods.
