Easy peanut butter no bake oatmeal cookies made with old fashioned oats to give them that classic no bake taste.
No bake desserts are just the best. On a hot summer day, there’s nothing better then being able to make a good cookie without heating the oven. And since this no bake peanut butter pie turned out to be a favorite, how about we make some no bake cookies to go along with it?
No bake oatmeal cookies are my fav. I made these with both of my boys and they enjoyed how easy they were to make. They also loved that they could enjoy them pretty soon after we mixed the ingredients in the bowl. For once, my boys could lick the bowl and I didn’t have to worry about the eggs in the batter.
How to Make No Bake Oatmeal Cookies
In a medium saucepan over low heat, stir together the butter, milk and sugar until melted. Boil the mixture rapidly for one minute, then remove it from the heat. Stir in the peanut butter, vanilla and oats until well blended.
Drop spoonfuls onto wax paper until cool.
You’ll find you have a soft no bake oatmeal cookie that the whole family will love! I hope you enjoy these simple cookies as much as my family has!

No Bake Cookies Questions and Tips
My cookies are too soft and haven’t set. How do I fix that? If you find that your no bake cookies are too soft, simply pop them in the refrigerator to harden them up more quickly. Humidity and the type of peanut butter you use can make a big difference in how fast these will set.
Can I make these cookies ahead of time and freeze them? Yes, these cookies freeze really well. Just let thaw on the kitchen counter before enjoying.

Can Stevia replace brown sugar?
Lynette says
You could use stevia, but I don’t know how it will alter the recipe. I haven’t tested it. If you try, let me know how it turns out!
McRae Roberts says
Best recipe I’ve found. Brown sugar with creamy peanut butter made a Carmel, “fudgie” texture that was “devouringly” delicious.

So glad you enjoyed it!

Why do you use brown sugar instead of white? Personally I’ve been using white my whole life and have never heard of using brown sugar. So I’m curious as to why it’s used.
Lynette says
Hi! I feel like brown sugar gives a depth to the flavor in cookies and also some added moisture. A lot of times I use brown sugar in cookies like these traditional peanut butter cookies. I also like using a combination of white sugar and brown sugar sometimes in cookies like these cowboy cookies. It’s a personal preference depending on what kind of cookie I am making.

I know this is a few years old, but we were wanting a dessert without heating up the oven during a hot Texas summer, and this was great! I used coconut oil and almond milk to make dairy free. Thank you!

Do you know the nutritional value? Calories protein and sugar counts.

Can I use white sugar instead of brown
Lynette says
Hi Kathy, you can use white sugar but the brown sugar gives it a depth that you’ll be missing with only white. It’s really a matter of preference. Let me know what you think!
