Earlier this week I suddenly had a craving for hard boiled eggs. I therefore hardboiled ALL my eggs. Who knows why I sometimes over – do these kinds of things. Therefore, today when my 3-year old asked if we could make banana bread, I realized that I quickly needed to find a new recipe that did not include eggs.
The recipe I came up with was inspired by this No Milk and No Eggs Banana Bread recipe from Just a Pinch. I added a few of my own variations. I was pleasantly surprised to see how moist this cake was! The only difference I can see is that the batter is much more thick – but that doesn’t bother me.
This banana bread recipe is not too banana-y or not too sweet. I love it and will be making it again! I especially like that I can make it if we have friends over who have an egg allergy. Winner!
No Milk and No Eggs Banana Bread Recipe

Ingredients:
2 Cups All Purpose Flour
2 tsp Baking Powder
1/4 tsp Baking Soda
1/2 tsp Ground Cinnamon
2 Large Mashed Bananas
1/3 Cup White Sugar
1/3 Cup Brown Sugar
1/3 Cup Melted Butter
1/2 tsp Vanilla
Directions:
1. Mix dry ingredients together. Set aside.
2. Mash bananas. Add melted butter, sugar and vanilla. Stir and mix well.
3. Incorporate dry ingredients. (The batter will be thick.)
4. Add batter to greased bread pan.
5. Bake in pre-heated oven at 350 Fahrenheit for 50 minutes.
Tips:
The batter is thicker than most banana bread recipe batters. Don’t worry, it turns out great!
Once the batter is in the bread pan, sprinkle the top with a little brown sugar. Yum!
