Oatmeal Fudge Cookies

Ingredients

  • Oatmeal:
  • 1/2 cup shortening
  • 1 cup brown sugar
  • 1/4 cup. unsweetened applesauce
  • 1 tsp. vanilla
  • 1 cup all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 cups rolled oats
  • 1/2 cup chopped pecans
  • Fudge:
  • 3/4 cup semi-sweet chocolate chips
  • 2 T. butter
  • 1/2 T. water
  • 1/4 cup all-purpose flour
  • 2 T. granulated sugar

Instructions

  1. Preheat oven to 350 degrees
  2. In a mixing bowl, cream the shortening and sugar until fluffy.
  3. Add the applesauce and vanilla until combined.
  4. In a small bowl, whisk together the flour, soda and salt.
  5. Add the flour mixture to the mixing bowl and mix well.
  6. Stir in the oats and pecans.
  7. Create “birds nests” with the oatmeal and lay them on cookie sheets; then put them in the freezer to harden.
  8. Meanwhile, make fudge. Microwave chocolate chips and butter until just melted.
  9. Add water and stir until combined.
  10. Whisk in the flour and sugar.
  11. Spread the fudge into the inside of each “nest”
  12. Bake 10 minutes or until lightly browned.
