Let’s talk St. Patrick’s day and oreo brownie cupcakes. I was in the mood for brownies this week and so I decided to make them festive by adding gold sprinkles to make pot of gold cupcakes! They turned out so adorable – and the mint oreos were amazing with the chocolate. I mainly picked the green oreos because they were green. I’m simple like that. However, the mint flavor was OH SO GOOD. I can’t wait for you all to try these.
Now, I know there’s lots of pot of gold ideas out there, but I think this one is the easiest. If you have a classroom treat you need to make or are adding a festive dessert to your dinner table, these are a real winner.
To make these St Patricks day brownie cupcakes you will need:
Brownie Mix (and everything it calls for to make your brownies)
Brown cupcake liners (optional)
Air Heads xtreme Rainbows
Rolos (if you want to add something different)
Make your oreo batter according to the instructions. Spoon 2 tablespoon-ish into each cupcake liner. I used my cookie scoop which worked perfectly.
Bang the pan a bit against the counter to really even out the batter. Then add the oreo cookies.
Top with another two tablespoons of batter. I only did half with the oreos because my husband doesn’t like mint. (I know!) You can see the difference in the height but they baked up fine.
Bake in the oven according to the package directions. My directions were for 325 degrees Fahrenheit for 20 – 25 minutes. You can tell when they’re done when your toothpick comes out clean. If you’re adding rolos, you can press them into the brownie cupcakes at this time while they’re piping hot.
Spread icing to the top of each brownie cupcake. I also took my icing knife and pressed it into the brownie cupcake so that I could insert the rainbow. Dip the cupcakes into a bowl of gold sprinkles. So pretty!
And that’s it! Seriously, they are so easy to make and I think they turned out super cute! There was no balancing act or trouble transporting them.

- Brownie Mix
- Air Head xtremes (rainbow)
- Gold sprinkles
- Chocolate Icing
- Rolos (if you don’t like oreos)
- Make brownie batter according to package directions.
- Add 2 TB to each cupcake liner in the cupcake pan. Make sure the batter is even.
- Add oreo.
- Add 2 TB to the top of the oreo. Make even.
- Bake according to package directions for around 20 – 25 minutes.
- When cooled, top with chocolate icing. Dip into gold sprinkles.
- Add short rainbow to each cupcake.
