Ingredients

Scale
  • 1/2 Cup shortening
  • 1 Cup sugar
  • 1 large egg, beaten
  • 1 Cup pureed pumpkin
  • 1 1/2 Cup white flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1 teaspoon cinnamon
  • 1/2 Cup pecans, chopped

Instructions

  1. Preheat oven to 350˚ F and grease or line a muffin pan.
  2. Cream together the shortening and sugar.  Add the egg and pumpkin.
  3. In a separate bowl, whisk together the dry ingredients.  Stir in the pecans.
  4. Combine all the ingredients until well incorporated.
  5. Bake at 350˚ F for 20 – 25 minutes or until a toothpick inserted in the middle comes out clean.
  6. Let muffins cool for 10 minutes and then remove from muffin pan.

Notes

These muffins freeze beautifully! Once fully cool, add to an airtight container and freeze for up to 4 months. When ready to enjoy, wrap in a paper towel and microwave on high for 20-30 seconds.
