Skillet Lasagna

This skillet lasagna is everything I love about classic lasagna – layers of tender noodles, creamy cheese, and a bold, flavorful homemade sauce, but it all comes together in one pan with a fraction of the effort.

Why I Love This Recipe

Skillet lasagna can be tricky because everything cooks in one pan. It’s easy to end up with uneven noodles, a watery sauce, or a scorched bottom if you’re not careful with the heat or stirring. I’ll show you how to get it right!

This recipe has been a staple in our home for years. My kids love it, especially my youngest. I even found an old photo of them enjoying it the first time I made it!

  • All the comfort, none of the hassle. I get that cozy, layered lasagna goodness without messing with multiple pots or baking dishes- just one skillet from start to finish, a lot like my skillet macaroni and beef recipe.
  • The sauce is so flavorful. A quick simmer of garlic, tomatoes, and spaghetti sauce creates a rich, savory base that tastes like it’s been cooking all day.
  • It comes together fast. This recipe skips the long bake time and goes straight to the stove, making it doable on even my busiest weeknights. It’s just as easy as my bowtie pasta lasagna!
  • Creamy, cheesy layers. The cottage cheese mixture adds a creamy richness that balances perfectly with the meat sauce and gooey mozzarella on top.

Key Ingredients and Substitutions

  • Ground Beef: The hearty base of the meat sauce. Use lean ground beef to reduce excess grease. You can substitute with ground turkey, chicken, or even plant-based meat for a lighter or vegetarian version.
  • Garlic: Adds flavor depth to the meat sauce. Use fresh minced garlic for the best taste, or substitute with ½ teaspoon garlic powder if needed.
  • Diced Tomatoes: Bring texture and a fresh tomato bite to the sauce. Fire-roasted or Italian-seasoned diced tomatoes can add extra flavor.
  • Spaghetti Sauce: Speeds things up by acting as the base for the meat sauce. Choose your favorite jarred brand or use homemade if you prefer. Marinara or tomato basil sauce are great options.
  • Eggs: Help bind the cheese filling and add richness. If you’re egg-free, you can omit them, the filling will be looser, but still delicious.
  • Cottage Cheese: Offers a creamy, protein-rich layer in place of traditional ricotta.
  • Italian Seasoning: A mix of herbs like oregano, basil, and thyme that flavors the cheese mixture.
  • Oven-Ready Lasagna Noodles: These no-boil noodles make this a one-skillet recipe.
  • Mozzarella Cheese: Melts into a gooey, golden topping. Use freshly shredded for the best melt. You can mix in a little parmesan for added flavor or substitute with an Italian cheese blend.

Step 5 – Simmer the Lasagna

Bring the skillet to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15–17 minutes, or until the noodles are fully tender.

Step 6 – Add the Mozzarella and Serve

Turn off the heat. Sprinkle the shredded mozzarella cheese on top. Cover again and let it stand for a few minutes until the cheese is melted. Serve warm and enjoy!

Lynette’s Tip

I recommend breaking the noodles at the edges as needed to create a full, even layer in the skillet – it helps everything cook evenly and fit just right.

What to Serve With

  • This skillet lasagna is perfect for busy weeknights when you’re craving comfort food. Serve it hot straight from the pan with a side of pull apart garlic bread.
  • Add a simple easy salad or roasted veggies to round out the meal. It’s hearty, satisfying, and easy to pair.
  • It’s also great for casual entertaining. Just bring the skillet to the table and let everyone dig in.
  • Leftovers reheat beautifully, making it a smart make-ahead option for lunch or dinner the next day.

Recipe FAQs

What’s the benefit of making lasagna in a skillet?

It’s faster, easier, and uses just one pan. You get all the flavor and comfort of traditional lasagna without heating up the oven or dealing with a big casserole dish.

Can I use regular lasagna noodles instead of oven-ready?

This recipe is designed for oven-ready noodles, which cook right in the sauce. If you only have regular lasagna noodles, you’ll need to boil them first until just tender before layering them into the skillet which will defeat the purpose of the recipe.

What kind of skillet should I use?

Use a large, deep skillet with a lid – preferably 12 inches in diameter. A nonstick or enameled cast iron skillet works great for even heat and easy cleanup.

Notes

Tip: I recommend breaking the noodles at the edges as needed to create a full, even layer in the skillet – it helps everything cook evenly and fit just right.
Storing: Store leftover skillet lasagna in a covered dish or airtight container in the refrigerator for up to 4 days. Let it cool slightly before sealing to prevent excess moisture.
Freezing: Skillet lasagna freezes well. Once cooled, transfer portions to freezer-safe containers or wrap tightly in foil and plastic wrap. Freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheating: Reheat individual portions in the microwave in 30-second intervals until hot. For larger portions, cover and reheat in a 350°F oven for 20–25 minutes, or until warmed through.

My Favorite Variations

  • Cheese Swap: You can use ricotta instead of cottage cheese if you prefer a creamier, more traditional lasagna texture. A sprinkle of parmesan on top also adds a salty finish.
  • Veggie Add-Ins: Stir in chopped spinach, sautéed mushrooms, or zucchini slices between the layers to sneak in extra veggies without much effort.
  • Spicy Version: Add a pinch of red pepper flakes to the meat sauce or stir in a little spicy marinara for a bold, flavorful punch.
