Guest Post From Merissa Alink from LittleHouseLiving.com.

Although I’m a make-it-from-scratch kind of mom, I love having the convenience of a meal or side dish that I can make up quickly for my family. In the summer we get quite busy with gardening and tending to new baby animals on our little farm so have a quick (but hearty) meal on the table for supper is a big perk. To accomplish this task, I love making my own pantry mixes for meals that I know my family will enjoy. One of our favorite side dishes is this Spanish Rice Mix Recipe. When this mix is made up we like to serve it with a simple main meal or chicken or tacos. Here is our recipe so that you can make it as well for your own quick family meals!

Spanish Rice Mix Recipe

What You Need:

  • ½ cup uncooked spaghetti
  • ¾ cup rice
  • 1 teaspoon salt
  • 1 teaspoon minced onion
  • 1 tablespoon dried tomato powder
  • ½ teaspoon chili powder

Mix all of the ingredients together and store in an air tight container or jar in your pantry until ready to use.

When you are ready to make the Spanish Rice you will need:

  • 2 tablespoons butter
  • 2 cups chicken or vegetable broth or stock
  • 1 jar Spanish Rice Mix

Brown the butter in a skillet. Add the mix and chicken or vegetable broth. Cook (stirring frequently) until rice and pasta are cooked through.

We like to serve this version with a bit of sour cream on top. If you cannot find dried tomato powder to put into your mix, substitute a cup of fresh diced tomatoes in place of 1 cup of chicken broth when cooking.

You can also make your own dried tomato powder if you plan on making several of these mixes. Slice washed, fresh tomatoes very thinly and place in a food dehydrator. Dry at 150 degrees for at least 10 hours or until the tomatoes are completely dry. You can try and do this in an oven as well if you don’t have a dehydrator, just make sure to set your oven to the lowest temp that it will go and watch your tomatoes very carefully. Once the tomatoes are dried and cool, blend them up into a powder using a blender or food processor. Store in an air tight container or in the freezer until you are ready to use.

I don’t have tomato powder- any idea how I could substitute fresh/canned tomato/paste when cooking?

Eso no es español, es una mezcla de cosas sin sentido, ¿mezclar arroz y espagueti? ¿ mantequilla? En España se usa aceite de oliva y se hacen ricas recetas de arroz o espagueti, pero nunca mezclado.

This is a real winner. I sun dry my own tomatoes and onions for this. My husband and toddler love it too. Using dried tomatoes and onions gives the rice a better texture than fresh would.
