Key Ingredients

  • All-Purpose Flour: This is the base of our recipe, providing structure to the biscuits.
  • Granulated Sugar: A touch of sweetness to balance the tangy strawberries.
  • Salt: Enhances the flavors of the other ingredients in the biscuits.
  • Cold Salted Butter: When the biscuits bake, the cold butter will melt and release steam, which creates a flaky texture.
  • Strawberries: They add a burst of fresh, fruity flavor to the biscuits giving them a strawberry shortcake-like flavor.
  • Powdered Sugar: This will be used in the glaze to add sweetness and a smooth, creamy texture.
  • Milk: Used to thin out the glaze and make it pourable, without adding too much sweetness.

Equipment

  • Mixing Bowls – You’ll need this to combine the dry ingredients and cut in the cold butter, and to also make the sweet glaze.
  • Baking Sheet – This is where you’ll place your biscuits to bake in the oven.

How to Make Strawberry Biscuits

Preparation

To start, preheat your oven to 425° F and grease a small baking sheet. This will make sure that your biscuits don’t stick to the pan and are easy to remove after baking.

Step 1 – Combine Dry Ingredients

In a large bowl, combine the flour, baking powder, sugar, and salt. This forms the base of your biscuit dough and gives it the perfect amount of sweetness and lift.

Step 2 – Add Butter and Strawberries

Cut in the cold butter until it resembles small peas in the dry ingredients. Then, stir in the strawberries until they are all coated and evenly distributed. This will give your biscuits a buttery, flaky texture and a burst of fresh strawberry flavor.

Step 3 – Add Milk and Mix

Slowly add 3/4 Cup of cold milk and mix it with a fork until the dough is just slightly sticky. This will bind all of your ingredients together and give your biscuits the right amount of moisture.

Step 4 – Fold and Shape

Remove the dough from the bowl and fold it over 10 times on a floured surface. Then, flatten the dough using your hands until it’s about 1 inch thick. You’re now ready to cut out your biscuits.

Using a biscuit cutter, cut the biscuits and place them on the greased baking sheet. Pop them in the oven and bake for 12 – 15 minutes, or until they are golden brown.

Step 6 – Make the Glaze

While the biscuits are baking, you can prepare the glaze. In a small bowl, combine the powdered sugar and milk using a fork. This will give your biscuits a sweet, creamy drizzle on top.

Step 7 – Drizzle the Glaze

Once the biscuits are done, and while they’re still warm, drizzle the glaze over the top. This will add a sweet finish to your biscuits and give them a beautiful, glossy sheen.

Step 8 – Serve

Your strawberry biscuits are ready to serve! They’re best enjoyed warm, so dig in and enjoy the delicious, fruity, buttery goodness.

Expert Tip

To ensure that your strawberries are evenly distributed throughout your biscuit dough, dice them small. This will help them to mix in more evenly.

Recipe Variations

  • Extra Sweetness: Toss the strawberries in a little extra sugar before adding them to the dough. This will add more sweetness to your strawberry biscuits.
  • Buttermilk Substitute: If you don’t have regular milk on hand, you can use buttermilk as a substitute. This will add a tangy flavor to your biscuits.
  • Different Fruits: Feel free to experiment with different fruits. Blueberries or raspberries would be a great substitute for the strawberries in this recipe.

  • These delicious Strawberry biscuits make for a perfect breakfast treat. Serve them with a hot cup of coffee or a glass of cold milk for a wonderful start to your day.
  • For a fun and unique dessert, serve these biscuits with a scoop of vanilla ice cream. The sweet, fruity flavor of the strawberries in the biscuits pairs perfectly with the creamy, cold ice cream.
  • If you’re hosting a brunch, these strawberry biscuits are a must-have. They go well with a variety of other breakfast dishes, such as eggs, bacon, and fresh fruit.
  • You can also serve these biscuits as a sweet afternoon snack. Simply pair them with a cup of tea and enjoy a relaxing break.

Recipe FAQs

Can I use frozen strawberries instead of fresh ones?

Yes, you can. However, make sure to dice them while they are still frozen and incorporate them into the biscuit dough quickly to prevent the extra moisture from affecting the texture of the biscuits.

What should the dough look like after adding the milk?

The dough should be just slightly sticky. It’s important not to overmix the dough at this stage to keep the biscuits light and fluffy.

Can I make the biscuit dough ahead of time?

I do not recommend making the dough ahead of time and storing it. The strawberries tend to release juice as they sit, and this can affect the texture of the biscuits. However, you can prepare the dry ingredients and have your strawberries ready to make the process quicker.

Storing and Reheating

  • Storing: If you have leftover biscuits, you can store them in an airtight container at room temperature for up to 2 days.
  • Freezing: You can also freeze them for up to three months. Make sure they are in a well-sealed freezer-safe container.
  • Thaw: When you’re ready to enjoy the frozen biscuits, let them thaw at room temperature.
  • Reheat: If you prefer warm biscuits, reheat them in the microwave for 20-30 seconds.

Serving Size

  • What to Expect: This strawberry biscuit recipe yields about 7 biscuits, each packed with the delicious flavor of fresh strawberries.
  • How to Scale: If you want to make more than 7 biscuits, you can easily double the recipe. Just make sure to use a larger bowl to mix the ingredients and a bigger baking sheet to accommodate the increased quantity.
