This recipe was found in a Southern local cookbook I purchased on vacation years ago.  I have tried a few sweet potato casseroles overtime, but what I like best about this recipe is that it’s not overly sweet.  I really like the crunchy topping as well.

How to Make Sweet Potato Casserole

Preparation

To start, preheat your oven to 350˚ F and grease a 9×13 baking pan. This will make sure that your casserole doesn’t stick to the pan and bakes evenly. Cook and peel the sweet potato as well as mash it.

Step 1 – Prepare the Sweet Potato Casserole

Combine all the casserole ingredients in a bowl and use an electric mixer to beat them until they are smooth. Once combined, pour this mixture into your greased 9×13 baking pan.

Step 2 – Prepare the Casserole topping

In a separate bowl, mix together all the topping ingredients using a fork. Once they are well combined, sprinkle this topping over the sweet potato mixture in your baking pan.

Step 3 – Bake the Casserole

Bake the sweet potatoes the day before to make this recipe a snap to put together.  Wash the sweet potatoes and poke them with a fork. Bake in a 350˚ F oven for 60-90 minutes depending on the size. Let cool and remove the skins. Keep in the refrigerator until ready to make the casserole.

  • 3 Cups sweet potatoes cooked, skinned and mashed
  • ½ Cup granulated sugar
  • 1/4 Cup butter melted
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1 teaspoon ground cinnamon
  • ¼ Cup evaporated milk heavy cream or half-and-half

Topping

  • 1 Cup brown sugar
  • Cup all purpose flour
  • 3 Tablespoons butter melted
  • 1 Cup pecans chopped

Instructions

  • Preheat oven to 350˚ F. Grease a 9×13 baking pan. Cook, skin and mash sweet potatoes.

How to Microwave Sweet Potatoes:  Wash the sweet potatoes and poke them with a fork.  Place on a microwave-safe plate and microwave each potato alone for five minutes.  Check to see if done based on the size of the potato.  If the fork inserted goes in easily than the potato is done.  If not, microwave for one-minute increments until fully cooked.  Remove skins and mash. Store in the refrigerator until ready to make the casserole.
Storing: This casserole can be stored in the refrigerator for up to 4 days. Make sure to let it cool completely before covering it in an airtight container.
Freezing: If you’d like to make this ahead of time, it can be stored in the freezer for up to 3 months.
Thaw: When you’re ready to enjoy the casserole, let it thaw in the refrigerator for 24 hours.
