Mexican Casserole Recipe
To make polenta, bring 3 cups of water to boil in a large pan. Whisk in 1 cup of cornmeal.
Spread the polenta at the bottom of a well-greased 13×9 baking dish.
Mix remaining ingredients (except for cheese) and spread your bean mixture onto the polenta.
Top with 2 cups of shredded Monterey Jack cheese.
Bake uncovered 350˚ F for 45 minutes.
