Chocolate Mayonnaise Cake

This chocolate mayonnaise cake recipe will give you the most moist, tender, and rich cake packed with a delicious chocolatey flavor. Super easy to make!

Ingredients
  

Cake:

  • 1 Cup Mayonnaise
  • 1 Cup Hot Water (not boiling)
  • 2 Cups All-Purpose Flour
  • 5 Tablespoons Cocoa Powder
  • 1 ½ teaspoon Baking Soda
  • 1 Cup Granulated Sugar

Frosting:

  • 1 Cup Butter melted
  • Cup Cocoa Powder
  • 3 Cups Powdered Sugar
  • Cup Milk
  • 1 teaspoon Vanilla

Instructions

Cake Instructions:

  • Preheat oven to 350˚ F and grease a 9x9 square baking pan.
  • In a large bowl, whisk together the mayonnaise and hot water. Stir in the remaining ingredients until well incorporated. Add to square baking pan.
  • Bake in 350˚ F preheated oven for 25-30 minutes or until a toothpick entered into the center comes out clean and the edges are just starting to pull away from the sides. Let the cake fully cool.

Frosting Instructions:

  • Melt the butter and stir in the cocoa powder. Add the powdered sugar and milk alternating between each beating until the desired tendency. If you need it to be thinner, add a little bit of milk. Spread onto a cooled cake.

Notes

Expert Tip: Let the cake cool completely: Before applying the frosting, make sure that the cake has fully cooled. A cooled cake will take hours, which is why I recommend making this cake the day or morning before you will need it. A cooled caked prevents the frosting from melting and ruining the cake's appearance.
Refrigerate: Once your homemade chocolate cake has cooled down, wrap it tightly in plastic wrap or store it in an airtight container and place it in the fridge. It will keep well for up to three days, retaining its moist cake texture and rich chocolate flavor.
Freeze: This moist cake freezes really well. When freezing, make sure the cake is completely cooled, then wrap each layer in plastic wrap and foil. It can be stored in the freezer for up to three months.
Thawing Instructions: When you're ready to enjoy your frozen cake, allow it to thaw in the refrigerator overnight. Once it's at room temperature, you can add the chocolate frosting if you haven't done so before freezing.
Reheat Instructions: There’s no need to reheat this delicious chocolate mayonnaise cake.
