This old fashioned bread pudding recipe is a classic, rich dessert that's packed with banana flavor and a touch of sweetness, offering a unique, crunchy texture thanks to the caramelized edges of the bread.

Ingredients

  • 2 large eggs
  • Cup granulated sugar
  • 1 ½ Cup milk
  • teaspoon ground nutmeg
  • teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 7-8 slices French bread 1-inch slices and then into 1-inch cubes
  • ¾ Cup seedless raisins
  • 1 banana sliced dime sized
  • whipped cream optional topping

Instructions

  • Preheat oven to 350˚ F. Grease a square baking pan.
  • Beat the eggs in a medium sized bowl for 2 minutes or until light in color. Add the sugar, milk, nutmeg, cinnamon and vanilla.
  • Cut the bread into 1-inch cubes and add to a large bowl. Pour the egg mixture over the bread and toss lightly.
  • Add the raisins, and bananas and again toss lightly until everything is mixed and the bread is covered by the egg mixture. Add to square baking dish.
  • Bake in a 350˚ F oven for 25-30 minutes or until golden brown. Cool and serve with whipped cream.

Notes

Expert Tip: To guarantee that the banana is evenly distributed throughout your bread pudding, consider cutting it into small cubes instead of slices. This will help to prevent the banana from sinking to the bottom of the pudding during baking.
Refrigerate: If you have any leftover bread pudding, you can store it in the refrigerator. Place the bread pudding in an airtight container and it will keep well for up to 3 days.
Freeze: Unfortunately, this bread pudding recipe doesn't freeze well due to the custard-like nature of the dish. Freezing may cause the texture to become soggy and unpleasant.
Reheat Instructions: If you've stored your bread pudding in the refrigerator, you can easily reheat it in the oven. Preheat your oven to 350˚ F, place the bread pudding in a baking dish, and cover with foil. Heat for about 15-20 minutes or until warmed through.
