Brownie Pudding

This brownie pudding recipe is the ultimate treat for those who love their desserts fudgy, rich and packed with a pudding base. With its soft cake-like texture, it's a dessert and a pudding all in one!

Ingredients
  

  • 1 Cup all-purpose flour
  • 2 teaspoons baking powder
  • ¾ Cup granulated sugar
  • ½ teaspoon salt
  • 2 Tablespoons cocoa powder
  • ½ Cup milk
  • 2 Tablespoons butter melted
  • 1 teaspoon vanilla extract
  • ¾ Cup nuts chopped, optional
  • ¾ Cup brown sugar
  • ½ Cup cocoa
  • 1 ¾ Cup hot water

Instructions

  • Preheat oven to 350˚ F. Grease an 8x8 square baking pan.
  • Sift together the flour, baking powder, salt, and 2 Tablespoons of cocoa. Add the milk, vanilla, and butter. Mix everything together until smooth. Add the nuts (optional) and pour into a greased square baking pan.
  • Mix the brown sugar and ½ Cup cocoa powder. Sprinkle over the batter.
  • Pour the hot water over the entire batter and bake for 40-50 minutes or until done. Let cool for 10 minutes.

Notes

Expert Tip: For the best results, serve your chocolate brownie pudding warm. That's when you'll get the best soft cake-like texture which contrasts beautifully with the shell crust and pudding base.
Storing: After enjoying the delicious brownie pudding, you can store any leftovers in an airtight container in the refrigerator for up to 3 days.
Freezing: This dessert is best enjoyed fresh but if you want to store it for longer, you can freeze it. Once the pudding has cooled, cut it into individual portions and wrap each one in plastic wrap. Then, place the wrapped portions in a freezer-safe bag or container. They can be stored in the freezer for up to three months.  The pudding texture will be different, but it is still yummy.
Reheating Instructions: When you're ready to enjoy brownie pudding, simply allow it to thaw at room temperature. Once it has completely thawed, reheat it in the microwave before serving.
