Oatmeal Pie

This Oatmeal Pie tastes like a classic pecan pie with a chewy oatmeal cookie texture. It's warm, comforting, and packed with flavor in each bite!

Equipment

  • 1 Pie Shield
  • 1 9-inch pie plate
  • 1 large bowl

Ingredients
  

  • 1 9 inch Pie Shell
  • 1 Tablespoon all-purpose flour
  • ¾ Cup Granulated Sugar
  • ¾ Cup Old Fashioned Rolled Oats
  • ¾ Cup Dark Corn Syrup
  • 2 Eggs slightly beaten
  • ½ Cup Unsweetened Flaked Coconut
  • ½ Cup Butter melted

Instructions

  • Preheat oven to 350˚ F. Shape pie dough in pie shell and spread 1 Tablespoon of flour on the base of the shell.
  • Mix the sugar, oats, corn syrup, beaten eggs, coconut, and butter together in a large bowl.
  • Pour into raw pie shell.
  • Bake for 45 minutes. After 20 minutes add a pie shield to avoid burning edges.
  • Let the pie cool for four hours before serving.

Notes

Refrigerate: After allowing your oatmeal pie to cool for at least four hours, any leftovers should be carefully covered and placed in the refrigerator. The chilled temperature will help preserve the flavor and texture of the pie, keeping it delicious for you to enjoy later.
Reheating Instructions: When you're ready to enjoy your refrigerated oatmeal pie, you can reheat it in the oven. Preheat your oven to a moderate temperature, place the pie on a wire rack in the center, and heat it until it is warmed through.
