Homemade raw macaroon cookies full of coconut flavor with shredded coconut and coconut oil.

Ingredients
Macaroons
2cupsshredded coconut
1/4cupcoconut oilmelted
1/2cupall purpose flour
1/3cuppure maple syrup
1/4teaspoonsalt
1teaspoonpure vanilla extract
Chocolate Coating:
1 1/2cupschocolate chips
1/2cupunsweetened coconut milk
2teaspoonhoney
1/2teaspoonpure vanilla extract
Instructions
Mix all the macaroon ingredients with a fork in a bowl until well combined. Form into balls and refrigerate until hard.
TIP: For a little variation, toast some whole almonds at 325 for 8 minutes and then insert one almond into each coconut ball before refrigerating - simulates almond joy!
Melt the chocolate coating ingredients together.
While chocolate is warm, coat each ball using your fingers or a fork and dry on wax paper.
