Easy Chicken Pot Pie

Chicken pot pie is a hearty dish consisting of chicken, vegetables, and a thick, creamy sauce. It's a very popular comfort food recipe to make! This chicken pot pie is made with a super simple top biscuit like crust which means no pie crust - making it an easy recipe.

Equipment

  • 1 deep dish pie pan

Ingredients
  

Pie Filling

  • 3 Cups cooked chicken cubed
  • 10 oz frozen vegetables
  • 1 Cup chicken broth
  • 10.5 oz can cream of celery undiluted
  • 1/4 teaspoon ground pepper

Pie Top

  • 1 Cup baking mix
  • 3/4 Cup milk
  • 1/4 Cup butter melted

Instructions

Prep

  • Preheat oven to 400˚ F. Lightly grease with butter a deep pie pan or square baking dish.

Pie Filling

  • Spread chicken onto the bottom of the baking dish. Top with frozen vegetables.

  • In a bowl, mix the canned soup, chicken broth, and pepper. Pour over chicken and frozen vegetables.

Pie Top Crust

  • Mix in a small bowl the baking mix, butter, and milk. Pour over the chicken mixture.

Baking Instructions

  • Bake in a preheated 400˚ F oven for 40-50 minutes or until the internal temperature reaches 160˚ F and the top crust is golden brown. Let cool 10 minutes before serving.

Notes

Baking Tip:  The edges of the filling may boil over in your oven.  Place a cookie sheet below the baking dish to avoid a mess in your oven.
Avoid Over Browning of Crust:  Check your pot pie at the 30 minute baking mark.  If you find the crust is getting too brown, place foil on top for the remaining baking time.
Variation:  For a more biscuit like top crust, use cold butter instead of melted.  Cut the cold butter into the baking mix and then add the milk.  Spoon onto pie filling.  You may need to double the pie crust ingredients if making a more biscuit like top crust.
