Corn Flake Cookie Recipe

Corn flakes are not just for cereal!  They create a delicious crunch in this cookie recipe.

Ingredients
  

  • 1 cup butter softened slightly
  • 1 ½ cups granulated sugar
  • ½ cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ Cups all purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 2/3 cups chocolate chips
  • 3 cups corn flake cereal
  • 1 cups mini marshmallows

Instructions

  • In a large bowl, mix together the butter and sugars. Whip in the egg and vanilla extract. Add in the flour, salt, soda, and powder and mix well until all ingredients are incorporated.
  • Carefully fold in the chocolate chips, corn flakes, and marshmallows until just combined. Place the dough mixture in the fridge for 30 minutes to an hour before baking.
  • To bake, pre-heat oven to 350 degrees. Scoop large scoops of cookie batter onto a greased cookie sheet, using a muffin scoop. Bake for about 15 minutes. Cool and enjoy these large, crunchy cookies!
