Pumpkin Pie Bars

Easy to make pumpkin pie bars with a chewy rolled oats crust, pumpkin pie middle and topped with brown sugar pecans and whipped cream.

Ingredients
  

  • 1 Cup all-purpose flour
  • 1/2 Cup old fashioned rolled oats
  • 1/2 Cup brown sugar
  • 3/4 Cup granulated sugar
  • 1/2 Cup butter softened
  • 15 oz pumpkin puree
  • 12 oz evaporated milk
  • 2 large eggs
  • 2 1/4 teaspoon pumpkin pie spice
  • 1/3 Cup brown sugar packed
  • 1/2 Cup pecans chopped
  • whipped cream for topping

Instructions

  • First Layer: Cream together the brown sugar and softened butter.  Add the flour and oats and mix until well combined and crumbly.  Press into the bottom of a 13x9 pan and bake at 350˚F for 15 minutes.
  • Second Layer: Combine white sugar, pumpkin, evaporated milk, eggs, and spices. Beat on medium speed with your mixer for 1 to 2 minutes.  Pour over the baked crust.  Bake in a 350˚F oven for 20 minutes.
  • Third Layer: In a bowl combine brown sugar and pecans.  Sprinkle over pumpkin pie bars.  Bake an additional 15-25 minutes at 350˚F oven until a knife inserted in the middle comes out clean.  Let cool, slice and top with whipped cream.
