Easy to make pumpkin pie bars with a chewy rolled oats crust, pumpkin pie middle and topped with brown sugar pecans and whipped cream.

Ingredients
1Cupall-purpose flour
1/2Cupold fashioned rolled oats
1/2Cupbrown sugar
3/4Cupgranulated sugar
1/2Cupbuttersoftened
15ozpumpkin puree
12ozevaporated milk
2large eggs
2 1/4teaspoonpumpkin pie spice
1/3Cupbrown sugarpacked
1/2Cuppecanschopped
whipped creamfor topping
Instructions
First Layer: Cream together the brown sugar and softened butter. Add the flour and oats and mix until well combined and crumbly. Press into the bottom of a 13x9 pan and bake at 350˚F for 15 minutes.
Second Layer: Combine white sugar, pumpkin, evaporated milk, eggs, and spices. Beat on medium speed with your mixer for 1 to 2 minutes. Pour over the baked crust. Bake in a 350˚F oven for 20 minutes.
Third Layer: In a bowl combine brown sugar and pecans. Sprinkle over pumpkin pie bars. Bake an additional 15-25 minutes at 350˚F oven until a knife inserted in the middle comes out clean. Let cool, slice and top with whipped cream.
