Pumpkin Pie Bars

Pumpkin pie bars with a homemade chewy oats crust, fluffy pumpkin pie middle and topped with brown sugar chopped pecans and whipped cream.  This easy fall recipe dessert is the perfect substitute for when you’re in the mood for pumpkin pie.

This time of year all things pumpkin are on my mind when it comes to dessert.  Pumpkin pie is one of my favorites, but sometimes you want something a little different and that’s where pumpkin pie bars arrive.

This recipe is pumpkin pie layered with a rolled oats crust and topped with brown sugar and pecans.  It’s super simple to pull together and delicious with each bite.

How to Make Pumpkin Pie Bars

First Layer: Cream together the brown sugar and softened butter.  Add the flour and oats and mix until well combined and crumbly.  Press into the bottom of a 13×9 pan and bake at 350˚F for 15 minutes.

Second Layer: Combine white sugar, pumpkin, evaporated milk, eggs, and spices. Beat on medium speed with your mixer for 1 to 2 minutes.  Pour over the baked crust.  Bake in a 350˚F oven for 20 minutes.

Third Layer:  In a bowl combine brown sugar and pecans.  Sprinkle over pumpkin pie bars.  Bake an additional 15-25 minutes at 350˚F oven until a knife inserted in the middle comes out clean.  Let cool, slice and top with whipped cream.

It’s no secret that if you love pumpkin, you’ll dive into all things pumpkin this time of year.  And since my birthday is in October and I always have pumpkin pie, having something a little different with a hot cup of coffee, is just what fall ordered.  There is goodness in every single bite when it comes to these pumpkin pie bars!

Ingredients

Scale
  • 1 Cup all-purpose flour
  • ½ Cup old fashioned rolled oats
  • ½ Cup brown sugar
  • ¾ Cup white sugar
  • ½ Cup butter, softened
  • 15 oz can pumpkin
  • 12 oz evaporated milk
  • 2 large eggs
  • 2 ¼ teaspoon pumpkin pie spice
  • ⅓ Cup brown sugar
  • ½ Cup pecans, chopped
  • whipped cream (for topping)
