A delicious make ahead hot chicken salad recipe that is perfect for entertaining or dinner at home. The combination of celery, toasted almonds and potato chips give this salad a crunch!

There are not too many unique make ahead simple recipes to serve when you’re making lunch for a friend.  And while the traditional chicken salad recipe is delicious, this time of year hot chicken salad is where it’s at.  I love the crunch this recipe has with the celery and the almonds, but the salty sweetness that the mayo and chips bring to the table make it a great recipe.  Let’s not forget the juicy chicken that’s really the star of the show.

Why You Should Make Hot Chicken Salad

  • You can make it up to 24 hours ahead of time (minus adding the potato chips).
  • The big chunks of delicious chicken soak up every little bit of flavor from the celery. Yum!
  • It’s not super saucy if you know what I mean. It’s more of a dry chicken salad which means that the flavors bake in – and make this recipe the best!

How to Make Hot Chicken Salad

Grab these ingredients:

  • celery
  • fully cooked chicken
  • cheddar cheese
  • onions
  • mayonnaise
  • potato chips

All things I typically have on hand!

First things first.  Combine the fully cooked chicken, toasted almonds, onions, mayonnaise and salt.

It really is this easy!  After combining the hot chicken salad ingredients add them to a 2 quart baking dish.

Top with cheese and potato chips – and done!  Bake in the oven for 30 to 45 minutes.

It is best served hot while the chips are still crispy.  However, the hot chicken salad leftovers are delicious.  Enjoy!

Description

Hot chicken salad recipe made with toasted almonds, celery and potato chips.


Ingredients

Scale
  • 4 cups chicken, fully cooked
  • 3 cups celery, chopped
  • 1 teaspoon salt
  • 1 Cup toasted almonds
  • 2 teaspoons onion, minced
  • 1 ⅓ Cup Mayonnaise
  • 1 Cup cheddar cheese, shredded
  • 2 Cups potato chips, crushed

Instructions

  1. Combine fully cooked chicken that has been cut into bite size pieces, celery, salt, almonds, onion and mayonnaise.
  2. Place in 2 quart baking dish and top with shredded cheese and then potato chips.
  3. Bake at 350° F for 30 to 45 minutes.
  4. Serve hot.

 

Notes

To toast your almonds, place single layer onto a baking dish in the oven at 350° F.  Bake for 3 to 4 minutes.  Check every minute until they are toasted.
