Busy nights with school now in session? I was a bit thrown for a loop when my oldest started school last week. By the time he came home and I had organized everything he brought with him, it was time for dinner. It’s hard getting back on schedule so I’ve tried to make easy meals each night. One, because my oldest is STARVING when he walks into our house. Two, because I’m exhausted as well and want something that doesn’t take too much thought.
Does anyone else have a hard time getting back into a school routine? This is the first time I’ve had an all-day schooler and while I like the time alone for a few hours a day while my preschooler is at school, I’m out of schedule and not really feeling it when it’s time for dinner. This past weekend I sat down to really meal plan, but I made the mistake of not doing that last week – whooops!
In order to not eat out, I ran into Wal-mart to grab a few items to whip dinner together quickly. I originally thought I would grab their Marketside pizzas to grill. However, lucky for me they have their rotisserie chicken in the front near the check-out. They have the signage at Wal-mart to make it easy to find dinner with very little effort. Their Effortless Meals are convenient, provide a healthy option for my family and are a fresh option during this crazy busy back-to-school season. Best yet is that I spotted the signs right near the registers near the front of the store. There’s no need to go through the entire store when you’re in an unmotivated hurry, right? 🙂
Here’s what I grabbed, along with a lime. Just because I wasn’t motivated didn’t mean I wanted to put the chicken on the plate and call it dinner. Been there. Done that, a lot. I wanted something that felt homemade on a hot summer night and not just chicken a’la plate. You know what I mean?
Here’s what I grabbed from my cupboards and refrigerator. If you don’t have all of this, don’t worry. You can grab some taco seasoning and anything else you have in your refrigerator. That’s the point of the effortless.
Here’s what I had on hand to make this rotisserie chicken recipe:
1 cup of shredded rotisserie chicken
1 TB fresh lime
1/4 cup fresh salsa
1/4 cup black beans
2 TB diced red onion
pinch of pepper
pinch of red pepper
1/2 cup chopped romaine
1/4 cup shredded cheese
1/8 tsp cumin
1/4 tsp chili powder
2 tortillas
coleslaw (side)
Coke Zero (to get you through bedtime) 🙂
Mix the ingredients in a large bowl.
Place the mixture onto a tortilla and roll it into a burrito. (I wish I had had some sour cream at home.)
The aftermath didn’t look especially beautiful, but this dinner was on the table in 10 minutes. Love that. And it was soooo good! It has a bit of a fiesta flare. I think the next time I’ll add rice.
There’s nothing like a throw it all together quick meal for a busy night. Or to be honest, on a night when I feel like I’m pulled in a thousand directions as we get used to a new schedule. I paired the burritos with some coleslaw and some Coke Zero for my husband – to give him a little caffeine kick to get us through the evening.

What a great idea to turn a rotisserie chicken into a burrito meal! I love that you picked up the entire meal, Coke and sides included, on a quick run to Walmart. I can certainly use an easy meal like this when school starts for my boys next week! #client
