I make chocolate covered peanut butter Ritz every holiday season. They’re festive, foolproof, and the first thing gone from the cookie tray.

How to Make Chocolate Covered Peanut Butter Ritz

Preparation

Lay out a sheet of wax paper on your kitchen counter to prepare for cooling. Set out about 34 Ritz crackers and have your peanut butter and melting chocolate ready to go.

Step 1 – Make the Sandwiches

Spread about 1/2 tablespoon of peanut butter onto half of the Ritz crackers. Top with the remaining crackers to form sandwich-style cookies.

Step 2 – Melt the Chocolate

Place the melting chocolate in a microwave-safe bowl. Microwave on high for 1 minute, then stir. Continue microwaving in 15–30 second increments, stirring after each, until smooth and fully melted.

Step 3 – Dip the Sandwiches

Using a fork, dip each peanut butter sandwich into the melted chocolate, tapping it gently on the side of the bowl to remove excess. Place dipped sandwiches onto the prepared wax paper.

Step 4 – Add Toppings

While the chocolate is still soft, top with sprinkles, coarse salt, or colored chocolate for decoration.

Step 5 – Cool and Store

Let the cookies cool and harden at room temperature. Once fully set, store them in an airtight container at room temperature for up to one week.

Lynette’s Tip

To avoid burning the chocolate, stir often and let the residual heat do the work. Stop microwaving before all the wafers are melted and stir until smooth. Patience makes for perfect dipping!

What kind of peanut butter works best?

Creamy peanut butter spreads the easiest and gives the best texture. You can use crunchy if you like a bit more bite, but it may be harder to sandwich the crackers.

Can I use any kind of chocolate?

Melting wafers work best for a smooth finish. You can also use almond bark or high-quality chocolate chips. Just be careful not to overheat them when melting.

How do I avoid burning the chocolate?

Microwave for one minute, then stir for at least 20 seconds. If the chocolate isn’t fully melted, microwave for another 15 to 30 seconds and stir again. The last bits should melt from the heat of the rest.

Ingredients
  

  • 1 sleeve of Ritz crackers about 34 crackers
  • 1/2 Cup peanut butter
  • 12 oz. melting chocolate

Instructions

  • Lay out wax paper on the kitchen counter.
  • Top each Ritz cracker with about 1/2 a Tablespoon of peanut butter.  Top with another cracker to create a peanut butter sandwich cracker.  Repeat until you have the number of peanut butter crackers you want to make.
  • In a microwave safe bowl, melt the melting chocolate on high for 1 minute.  Remove from microwave and stir.  Microwave at 15 – 30 second increments stirring each time until the chocolate is smooth and melted.
  • Dip the peanut butter crackers into the melted chocolate with a fork.  Tap against the sides to remove any excess chocolate and to smooth the top.  Place chocolate covered cracker on wax paper to cool.
  • Before fully cool, top with sprinkles or other fun additions.

Notes

Toppings: Use colored sprinkles, course salt or swirls of colored chocolate to top your Ritz Peanut Butter crackers to make them look fancy.
Tip: You do not want to use the microwave until all the chocolate looks like it is melted. It will burn. Instead after the first minute stir for at least 20 seconds to let the chocolate naturally melt. Then microwave again if need for another 15-30 seconds. Stir for 20 seconds. The goal is for the last chocolate to melt as you stir to make sure it’s smooth and not over melted.
Make Ahead: Assemble and dip the crackers in chocolate, then let them cool completely. Store in an airtight container at room temperature for up to 1 week.
Store: Once the chocolate has fully set, store the cookies in an airtight container at room temperature for up to 1 week. Keep them in a cool, dry place to prevent the chocolate from softening.

My Favorite Variations:

  • Add Crunch Inside: Mix crushed pretzels, toffee bits, or mini chocolate chips into the peanut butter before sandwiching. It adds texture with each bite.
  • Top with Something Fun: Decorate with sprinkles, flaky sea salt, crushed peppermint, or crushed nuts. These small touches make them festive for any holiday.
