Easy Meatloaf Recipe

Mom’s easy meatloaf recipe.  It’s the best.  Seriously.  Growing up when my mom would ask me what I wanted for dinner on my birthday, my answer was always meatloaf.  When I came home from college for a home cooked meal, it was meatloaf.  When I lived out of state and we visited for a few days, meatloaf sandwiches were packed for our lunch on the road.  It’s that good.

Now I know that meatloaf sometimes gets a bad rap.  It’s not the most beautiful dish one could make.  But it is one of the tastiest.  And best yet, it makes great leftovers.  I like a cold slice of meatloaf with a little mustard on some fresh bread.  Yum!

Are you ready to make this easy meatloaf recipe?

Ingredients:
2 lbs. ground beef {works best and is the least greasy with 1 lb 85% and 1 lb 93%}
2 Cup crushed breadcrumbs
¾ Cup water
2 eggs
¼ Cup Ketchup
1 envelope Lipton dried onion soup mix {crush mix while still in packet}

That’s it.  It could not be easier, right?

Preheat your oven to 350 degrees Fahrenheit.  While it’s heating, combine all the ingredients in a bowl.  Mix them well.  I get my hands in there to mix it really well.  Just make sure to wash them afterwards.  🙂

Press the mixture into a 9″ inch square pan that’s been sprayed with cooking spray.  Pack it in there!

Bake for one hour!  Let set for about 10 minutes to cool and enjoy!

    This is my second time making this meatloaf.First time I didn’t have the recipe before me and worked from m Emory only using 1 cup of breadcrumbs one egg no li p Ron onion soup. It still was very good. The second time I followed the recipe and was delicious.

    Great recipe! I’ve used it for years and it never fails. It’s also a good base to add more fun, like cheese in the middle or Ketchup on top.

    Yup, you should make the Meatloaf for your Saintly parents. LOL
    Updating (renovating) a new-to-you old house can be a lot of work, a major expense, AND most rewarding. As you mold it into your own you will laugh, cry, remove wall paper, clean-up spilled paint etc. But as soon as that one room begins to look like you want it to look, you will know how much this “home” will mean moving forward. Could even be your forever home. Best wishes. Enjoy making that meatloaf.
