Peanut Butter No Bake Oatmeal Cookies

Easy peanut butter no bake oatmeal cookies made with old fashioned oats to give them that classic no bake taste.

No bake desserts are just the best.  On a hot summer day, there’s nothing better then being able to make a good cookie without heating the oven.  And since this no bake peanut butter pie turned out to be a favorite, how about we make some no bake cookies to go along with it?

No bake oatmeal cookies are my fav.  I made these with both of my boys and they enjoyed how easy they were to make. They also loved that they could enjoy them pretty soon after we mixed the ingredients in the bowl.  For once, my boys could lick the bowl and I didn’t have to worry about the eggs in the batter.

How to Make No Bake Oatmeal Cookies

In a medium saucepan over low heat, stir together the butter, milk and sugar until melted.  Boil the mixture rapidly for one minute, then remove it from the heat.  Stir in the peanut butter, vanilla and oats until well blended.

Drop spoonfuls onto wax paper until cool.

No Bake Cookies Questions and Tips

My cookies are too soft and haven’t set.  How do I fix that?  If you find that your no bake cookies are too soft, simply pop them in the refrigerator to harden them up more quickly.  Humidity and the type of peanut butter you use can make a big difference in how fast these will set.

Can I make these cookies ahead of time and freeze them?  Yes, these cookies freeze really well.  Just let thaw on the kitchen counter before enjoying.

Easy peanut butter no bake oatmeal cookies made with old fashioned oats to give them that classic no bake taste.   This no bake recipe makes a super soft peanut butter oatmeal cookie that the whole family will love!

Ingredients
  

  • 1/4 cup butter
  • 1/2 cup milk
  • 1 cup light brown sugar
  • 1 cup peanut butter
  • 1 teaspoon pure vanilla extract
  • 3 cups old fashioned oats

Instructions

  • In a medium saucepan over low heat, stir together butter, milk and sugar until melted.
  • Boil mixture rapidly for 1 minute, then remove from heat.
  • Stir in peanut butter, vanilla and oats until well blended.
  • Drop spoonfuls onto wax paper until cool.

Notes

*For dairy free, can substitute coconut oil for the butter and use coconut or almond milk
