Peanut Butter No Bake Oatmeal Cookies
Easy peanut butter no bake oatmeal cookies made with old fashioned oats to give them that classic no bake taste.

No bake desserts are just the best. On a hot summer day, there’s nothing better then being able to make a good cookie without heating the oven. And since this no bake peanut butter pie turned out to be a favorite, how about we make some no bake cookies to go along with it?

No bake oatmeal cookies are my fav. I made these with both of my boys and they enjoyed how easy they were to make. They also loved that they could enjoy them pretty soon after we mixed the ingredients in the bowl. For once, my boys could lick the bowl and I didn’t have to worry about the eggs in the batter.
How to Make No Bake Oatmeal Cookies

In a medium saucepan over low heat, stir together the butter, milk and sugar until melted. Boil the mixture rapidly for one minute, then remove it from the heat. Stir in the peanut butter, vanilla and oats until well blended.

Drop spoonfuls onto wax paper until cool.

You’ll find you have a soft no bake oatmeal cookie that the whole family will love! I hope you enjoy these simple cookies as much as my family has!

No Bake Cookies Questions and Tips
My cookies are too soft and haven’t set. How do I fix that? If you find that your no bake cookies are too soft, simply pop them in the refrigerator to harden them up more quickly. Humidity and the type of peanut butter you use can make a big difference in how fast these will set.
Can I make these cookies ahead of time and freeze them? Yes, these cookies freeze really well. Just let thaw on the kitchen counter before enjoying.

- 1 cup peanut butter
- 1 teaspoon pure vanilla extract

I added 1/2 c of semi sweet chocolate chips and they were great. The peanut butter with the chocolate made it taste similar to a peanut butter cup. Most definitely will make these again.

I like the idea that you substituted the dairy out, but have you tried subbing the brown sugar for a zero brown sugar for those with diabetes?
I haven’t tried any sugar substitutes with this recipe. The reason the cookies set is because of the sugar so using a substitute may not work with this recipe.
These were perfectly soft. I used plant butter and soy milk for a dairy free alternative and it worked perfectly.

Can you add coco powder to make them chocolate?
Do these have to cool in the fridge to set up?
No refrigeration is required for these to set. If you want them to set faster, you can put them in the refrigerator but it’s not required.
Can I use dark brown sugar if it’s what’s available to me at the time?
Sure! Dark brown sugar just has a little bit more molassses in it, but it should still be delicious!
My cookies are way to soft, now what can I do??? I followed your directions.
If the cookies are too soft after letting them cool, then the boil was not at a rapid boil before starting the timer for one minute. The rapid boil lets the sugar set to harden when cooled. They will still taste delicious. Sorry it didn’t work for out for you.
A rapid boil is a boil u can’t stir down with a spoon. Just to clarify for anyone. And the 1 min is very important. Less than makes them too soft, and more than makes them dry and crumble.

Can you use quick 1 minute whole grain oats
You can, but the texture may be different. I’ve not tested this recipe with quick oats.
